Munchkin Meals II

This beautiful mess wants to share her eats with you again today! We had so much fun last week thanks to Brittany over at A Healthy Slice of Life!



Coconut Flour Blueberry Pancakes. I cook them in coconut oil, and top them with extra coconut oil. We use that instead of maple syrup and she (and I) LOVES them! I use this recipe, cut it in half, and add 3/4 cup of mashed organic blueberries. Yum! {Heart shaped cookie cutters optional!}



Black bean dip with cucumbers and carrots. We add the infant probiotics to this as usual…

and after I cleaned her tray she has some nectarine:




Sweet potato & White Bean burger topped with Sun butter and coconut oil

{tip: when you mix coconut oil with any nut or seed butter it makes it less sticky and less of a choking hazard!}


and a little but of my salmon. She’s hit or miss with it. Sometimes she loves it, others, she tosses it on the floor. When she eats it she really seems to enjoy it though.


She also had a few bites of my roasted cauliflower (broccoli alone is still a no, she takes a bit, the floor eats the rest… unless it’s a broccoli dip or sauce, or in one of my baby sliders…then she loves it!). I forgot to take a photo because it wasn’t finished yet—then we were eating—and you know how that goes Winking smile


Just so you don’t think my daughter is always covered head to toe in hummus or some other dip:


Elmo’s world, backwards in her rocking chair (that her Mom Mom made her) right before the afternoon nap! Love her!!!!!!!!!!!!!!!!!!!!!

I also wanted to share with you her favorite bedtime lullaby. My mom started playing this for her when she was 3 months old on her iPhone. Now, she makes me play it during our bedtime routine. Bath, brush teeth, brush hair, read 10 Little Ladybugs, and another book (Good Morning, Good Night, something random or one of her Sesame books), then play the teddy bear song for her to watch while she nurses. She’s so cute with it! It’s so cute!

Hi, I cam over from Brittany’s blog. That first picture is so cute! I can’t wait until my son decides he likes solids. We’ve tried offering so many things and the only food he’s seemed to like is avocado.

Lindsay, they are just probiotics for infants and toddlers. I buy Udi’s from Whole Foods and sprinkle it in her food. The heart of your immune system is in your gut, so I keep E healthy by making sure she gets her daily dose of it!

I love this post! I have a little girl a couple of weeks younger than Ella and sometimes thinking of healthy meals for her gets hard. What is the recipe you use for the bean dip?

Hi Haylee! I haven’t quite perfected it….It’s basically just 1 can Eden-food black beans, some caramelized onions, filtered water, garlic and lemon juice (to preserve it naturally). I just keep adding water until I get a good consistency. Hope that helps! I plan to add these to my baby food cook book when I get them perfected!
