Healthy Carob Walnut Fudge with Sea Salt

When I was twelve years old I had Eddie Vedder wallpapered all over my bedroom. My mom’s teen idol was David Cassidy and my sister’s, Conan O’Brien. I seriously thought I was going to go to Seattle, find Eddie and he was going to fall madly in love with me. When the movie “Singles” was out on VHS I would watch it over and over and rewind the part with him in it. I knew everything about my cute grunger rock star, all of the bands he was ever in and the fact that his last name was not always “Vedder.” I saw MTV storytellers a bazillion times and cried when he got married to his high school sweetheart. Yea, I was a little obsessed….

Obviously I got over him, and we never met and got married. Actually he’s about as old as my parents so that would be kind of creepy. The one thing I never got to do though was see Pearl Jam in concert.They were boycotting ticket master at the height of my “fandom”, and when they finally did tour again my friends were too into Jay-Z and Biggie to go see them. I was much more cool when I was 12. My friends and I went to all of the cool concerts in the city. I saw Aerosmith front row and Steve Tyler sung to me personally. We went stage-diving at Weezer concerts at the Troc before they were well-known. I even played guitar. We were little hipsters before that was a word.

I am pretty much not cool at all anymore. I realize that. I want to be home by midnight, and I’d pick my PJ’s over loud music any day. I mean, I listen to talk radio.

Pearl Jam and Jay –Z are headlining the Philly “Made In America” concert this weekend and I want no parts of going anywhere near the city. I feel I owe it to my twelve-year old self to see my man Eddie in concert at some point however. It would have been cool to go, but I will be too busy at home enjoying healthy fudge. My twelve year old self would probably roll her eyes then cry if she knew how lame I’ve become.

I make up for it with said fudge though. Because after you try it you will think I am pretty awesome. Trust me. This is a good one! I even got the husband approval on it! That says a lot….



I hope you all have a lovely weekend! We are going to see my siblings who are about 5,000 times cooler than I ever was (even though they got it from me Winking smile ) play Friday night. I am fighting an annoying cold. I never get sick and now I am and I am miserable. I keep debating on whether I should go to hot power yoga tomorrow, or if it will make me dizzy and more miserable?

Oh this sounds amazing! I want to try it…..I really need to find a friend here who has a food processor! Maybe I could soften the oil and crush the chocolate chips and not need the processor…hmmm. I need to make something for dessert on monday that “normal” eaters will like—it’s always weird to me when people don’t like “dark chocolate.” So maybe I’ll make two things, this and something else.

My crush was definitely Kirk Cameron. And Jordan Knight. And later in college it was Heath Ledger. Then I grew up. Ha.

I had a button the size of my torso of Joey McIntire…hahahaa…NKOTB! That was more like 3rd grade though I think.

I hope your people like the fudge!!! Mike is not a “dark chocolate person” either. I don’t get it. But he liked this! He always complains my stuff is “too dark” for him, but the fudge got no complaints!

Oooo–girl that fudge looks amazing! I’ve been soo obsessed with cocoa powder lately. It’s all I’m craving. I also love “Singles.” But I have to say I think I like “Reality Bites” better–which is kinda similar. My teen idol? OK–When I was a kid–like 8-10 years old–Fred Savage from “The Wonder Years”–obsessed. Later–in my teen years–Leo Dicaprio and Ethan Hawke. I used to watch the Baz Luhrmann MTV version of “Romeo and Juliet” over and over again just to watch him–and of course I’d imagine it was me he was kissing rather than Claire Danes–lol 🙂

Hah My husband LOVEd The WOnder Years. Me too…but he was obsessed. I think he had a crush on Fred Savage too 😉

And I LOVED that Romeo and Juliet! I would watch that a lot too! Leo was a cutie in that! Now he looks really young there but when I was in high school…what a hottie 😉

i LOVE this post! so funny! i dont remember having just one, i guess i wasnt as dedicated as you. i seem to remember cutting out pictures of jonathan taylor thomas, scott wolf, of COURSE leonardo dicaprio, but then they all took the back burner bc i discovered… the backstreet boys, specifically aj mclean, and that forever changed me, haha. and i still MIGHT be listening to their cds, and following them on facebook.

hahah yes I was pretty dedicated. I had others too but nothing like Eddie! I think Leo held spaces where I didn’t have an Eddie picture! And my sister was OBSESSED with AJ before she found Conan hahah

You were with the rest of the girls when you had an obsession and a huge crush on someone! I don’t think I have had anyone when I was younger… maybe Brian from Backstreet Boys! And he still is my secret crush to this day!

i loved pearl jam too! my crush was gavin rossdale of bush…holy crap i STILL have pretty much every lyric on razorblade suitcase memorized. i was obsessed.
