When I was twelve years old I had Eddie Vedder wallpapered all over my bedroom. My mom’s teen idol was David Cassidy and my sister’s, Conan O’Brien. I seriously thought I was going to go to Seattle, find Eddie and he was going to fall madly in love with me. When the movie “Singles” was out on VHS I would watch it over and over and rewind the part with him in it. I knew everything about my cute grunger rock star, all of the bands he was ever in and the fact that his last name was not always “Vedder.” I saw MTV storytellers a bazillion times and cried when he got married to his high school sweetheart. Yea, I was a little obsessed….
Obviously I got over him, and we never met and got married. Actually he’s about as old as my parents so that would be kind of creepy. The one thing I never got to do though was see Pearl Jam in concert.They were boycotting ticket master at the height of my “fandom”, and when they finally did tour again my friends were too into Jay-Z and Biggie to go see them. I was much more cool when I was 12. My friends and I went to all of the cool concerts in the city. I saw Aerosmith front row and Steve Tyler sung to me personally. We went stage-diving at Weezer concerts at the Troc before they were well-known. I even played guitar. We were little hipsters before that was a word.
I am pretty much not cool at all anymore. I realize that. I want to be home by midnight, and I’d pick my PJ’s over loud music any day. I mean, I listen to talk radio.
Pearl Jam and Jay –Z are headlining the Philly “Made In America” concert this weekend and I want no parts of going anywhere near the city. I feel I owe it to my twelve-year old self to see my man Eddie in concert at some point however. It would have been cool to go, but I will be too busy at home enjoying healthy fudge. My twelve year old self would probably roll her eyes then cry if she knew how lame I’ve become.
I make up for it with said fudge though. Because after you try it you will think I am pretty awesome. Trust me. This is a good one! I even got the husband approval on it! That says a lot….
Healthy Carob Walnut Fudge with Sea Salt
- 3 Tablespoons coconut oil (solid)
- 2 Tablespoons carob powder (cacao or unsweetened cocoa powder will work also)
- 1 Tablespoon 70% cacao chocolate chips
- 1 1/2 Tablespoons chopped walnuts
- 1/2 teaspoon vanilla
- 1/2 teaspoon NuNaturals liquid stevia (or 1-2 Tablespoons maple syrup/sweetener of choice, to taste)
- sea salt, just a pinch and a sprinkle for the top
- a tiny dash of cinnamon
Place coconut oil in its solid form in a food processor along with the cocoa powder, vanilla and sea salt. Pulse a few times then add the rest of the ingredients and pulse until well combined. Line a small (3×3) tupperwear container with wax paper (or use lined muffin tins) and spread the fudge mixture evenly. Sprinkle another pinch of sea salt on top. Place in the freezer for about 15-20 minutes. Slice up and enjoy! Must stay in fridge or freezer for storage (it melts easily so eat up!)
I hope you all have a lovely weekend! We are going to see my siblings who are about 5,000 times cooler than I ever was (even though they got it from me ) play Friday night. I am fighting an annoying cold. I never get sick and now I am and I am miserable. I keep debating on whether I should go to hot power yoga tomorrow, or if it will make me dizzy and more miserable?
