Chocolate Coconut Butter

I promised a chocolate coconut butter recipe by the end of the weekend—so here it is! Boardwalk Empire finale, people—did you watch it? Oh my. What a crazy season! I can’t wait until next year to see how things play out!

Michael and I BOTH have been fighting a nasty cold all weekend.

Friday we took Ella to see Santa! She was just so adorable! I was feeling more the dry scratchy throat then, it got worse as the night went on. Saturday was pretty bad, even Michael wanted to stay in. Which says a lot. If you know my husband, you will know he has never met a Saturday night out that he didn’t like. It was even my sister’s birthday—we felt awful missing out on celebrating!  I will fill you al in in my neurotic, desperate attempts to not get sick later. I never get sick and when I do I am a freak.

Before I lost my sense of taste and smell I had a sudden inspiration to make chocolate coconut butter. Last time I made coconut butter I nearly killed my Vitamix, I think it was because I was making such a small amount and let my machine run too long. Don’t listen to bloggers when they say it’s “okay if your machine sounds like it’s breaking.” Umm…yea, it almost broke mine. No thank you. I am shipping it into Vitamix this week to have it serviced because it still sounds kind of funny.

I found this method was actually fine (no breaking!) and if I wanted it creamier I just add it to my kitchen aid stand mixer and mix it as fast as my paddle attachment will go! The real way to make coconut butter is with a stone grinder, but I’m not investing in one of those—so here’s my version:

Homemade Chocolate Coconut Butter

 

This was a lovely addition to my grain-free breakfast porridge!

I am off to bed. No nighttime medicine-it’s late and I am always afraid that I won’t wake up to my alarm! I have an early day tomorrow and I’m already NOT a morning person.

You and Ella are so beautiful together! I love that picture! Okay, I’m glad to know you can make coconut butter in the vita, because I was so scared to try it out with other nuts or coconut itself, but I’ll definitely be cautious of noises and leaving it on too long! Don’t want to break that thing. I have to catch up on that Dr. Oz article, I haven’t seen it yet but if I think it is what I’m thinking then that is just horrible to completely change your views because of a pay off. Off to read that!

shhhh i watched boardwalk empire on netflix so i’m still stuck on the death of jimmy. mmmm chocolately-coconutty goodness! omg…ella’s coat. i just cannnot! so cute! doc oz is a nutter…i never listen to a word of his snake oil science ever.

Dr OZ and people who worship every word that come out of his mouth really piss me off. Thats all I have to say about that.
