Coconut Sunbutter Cups {Sweetener-Free!}

Good evening, friends! Long time no talk! We’ve been crazy with life lately. All good stuff. We finally moved into our new home a week from today! Still have a thousand boxes to unpack, and it’s hard because we plan to re-do our kitchen in a few weeks so we still haven’t set anything up in the dining room, and I am living out of boxes in my kitchen. However, I am still cooking as much as I can, as challenging as it is! Can I just say that I LOOOOVE having a gas range! Seriously, it has changed my life. I am obsessed. Also, this house did not have a microwave in it, the prior owners took theirs with, and I DO NOT miss having one at all! I am coping fine without it and think that I may never look back!

I wanted to stop in really quickly and share these awesome little treats I make for the Weezy. Can you believe she’s 2 1/2 as of this week! She’s the craziest kid ever. We have a huge play set in the backyard for her that came with the house…she loves it. It is so nice moving from a tiny condo, with no where for her to play, to a house with a yard and her own bedroom. We are so grateful. Life is good!

I stick these in the freezer for some healthy fats! These are SO simple to make, they only have 5 ingredients, and my little girlfriend loves them!

Coconut Sunbutter Cups by The Fitness Dish

The best is how the center stays soft!

Coconut Sunbutter Cups {No sugar, dairy, grains, or sweetener}

makes: 2

ingredients:

  • 2 Tablespoons coconut butter
  • 1 Tablespoon coconut oil
  • 3/4 teaspoon vanilla extract
  • a pinch of sea salt
  • 1 Tablespoon sunbutter (organic, no sugar added)-or any nut butter of choice like almond or cashew butter

directions:

heat the first 4 ingredients over medium-low heat until melted. Add half of the batter to cupcake cups. Place about 1/2 Tablespoon into each cup. Cover with the rest of the batter and place in the freezer for at least 20 minutes. Done and done!

I have a few more fun mini muffin recipes written down for you guys. My photo skills have never been stellar, but they are even worse as of late. We have great lighting here (the above pic was taken at night)…so plan to try and get some new things up here when I feel satisfied with the pics, having the time to edit and all! Here’s the only room in our house we have (almost) finished, the family room! We still need some photos for the walls, Mike wants to pick out some new ones. Not shown, on the wall behind where I stood to take this pic is our computer desk and next to that our bookcase. It’s funny, we went from this tiny house, to a place with multiple rooms and we all still can’t seem to go away from each other. Mike and I kept joking before we moved in we would always be in separate rooms doing our own thing, never seeing each other but that’s totally not the case here!

We had our handyman put new closet doors on in most of the rooms…the doors either were torn off by the previous owners or completely busted.

Ella’s big girl bed arrives Saturday! We can’t wait to complete her room next! Then it’s the kitchen!

These are a definite try try today!! They look so good. Gives me an excuse to go out and buy more Sunbutter since I ate the remaining of it last night!

yayyy happy unpacking! ughhh i am so with you about gas ranges! i miss mine so much. our current place has electric and man, i feel like it’s so much more difficult to cook things well :( we don’t own a microwave either and aren’t getting one! it forces us to heat things up on the stove like people USED to do!

i need to get sunbutter asap. i have some coconut manna ripe for this! i’ve been doing this carb cycling thing. staying low carb during the week and then having a lowfat/high carb refeed day on the weekend (sweet potato/yam type deal). i never know what to eat for breakfast on those low carb days, but i would gladly take a sunbutter cup!

Yaaa! I’ve missed your recipes, especially the ones for Ella since my daughter is the same age. My personal favourites are your millet pancakes and garlic, shrimp, zucchini pasta. Please keep them coming when you find the time!

Hi Shan!!!!!!! Sorry so long to reply (I have major issues with google chrome and logging into my blog, I write from live writer, ugh). I am getting my kitchen renovated and believe y ou me when the project is finished I will be cooking and blogging MUCH more! THANK YOU for still reading here it means a lot that you haven’t forgotten me hahahah. How’s your little one?? They grow up SO fast!
