Gooey Baked Apples

Happy Hump Day!

It’s officially 12 weeks today :-)

AND we get to see the baby this week….yey!!!!

Before you get belly pics, you gotta see what filled my belly last night. OUTSTANDING!

Gooey Baked Apples

(serves 2)

2 Tart Apples, peeled, cored and sliced

2 Tablespoons Organic Brown Sugar

1 1/2 Tablespoons Oat Flour (grind up oatmeal until it’s a flour-like consistancy)

1 Tablespoon Cinnamon

1/8 teaspoon nutmeg

1/8 teaspoon ground cloves

3 Tablespoons Raisins

3 Tablespoons Chopped Walnuts

3 Tablespoons Full Fat Coconut Milk

Preheat oven to 350 degrees. Combine the sugar, flour and spices in a bowl and mix. Peel, core and slice the apples and add them to the spice bowl and mix them until coated. Places coated apples in a baking dish and fold in walnuts and raisins. Top with coconut milk and mix around. Bake for 25-40 minutes (depending on how mushy you want them), covered with foil.

I feel like my stomach is still kinda lame, LOL….a little pooch, but not too much to write home about. I still look like maybe I ate one too many Cinna-bons or something ;-)

Your Gooey Baked Apples look amazing! I will definitely have to try that out. You are going to be so adorable pregnant! I wish I was as skinny as you! I would love to look like that even with your mini baby bump!

Ooooo- those apples look fantastic. When I’m done this detox thing I’m doing right now, I’ll give it a whirl…but for now, 3 weeks no sugar, no snacking and a very limited diet. I’m excited for you about seeing the baby- enjoy it!!!

we haven’t decided yet…on the one hand, I am not good at waiting, on the other…it’s the LAST bog surprise in your life! There’s still time to decide :-)

Welllllllll I LOVED finding out… BUT we got 3 of the same outfit at our shower and almost NOTHING on our registry. SO, if you want THINGS to use, don’t find out or don’t tell the sex OR you will only get clothing. BUT everyone told me that and I did it anyway! Have fun! You look perfectly happy and healthy.

That’s EXACTLY what I am worried about! I don’t want people buying my a TON of the SAME pink clothing or a TON of the SAME blue stuff…so if we do, I’m keeping it a secret :-)

This comment made me laugh out loud….thank you for that! When I was 9-11 my cousin and I to teased for our “bubble butts” so I guess it runs in the family ;-) I also do A LOT of squats and lunges on my leg day once a week!

I am not going to get jealouse that a 3 month pretty pregnant lady has the same size waist as I do. I am not…still not….maybe a little…I’m leaving now and I am never coming back!! Just kidding! ;) You look great, keep up the “healthy” work!
