Vegan Peanut Butter Bon Bons

You never want to be called one of those people who “sits around all day eating bon bons.” –However,  I came up with a recipe to redeem this usually fattening dessert into a guilt-free snack!

I’ve been wanting to make these for a while now. Coming up with the recipe was quite simple. It was a matter of, do I want to add vegan butter, or not? Do I just want to make a peanut butter ball and coat it? Can I make it raw? What can I add to give it SOME type of nutritional value? Can I make them taste good with very little sugar? Well, I put them through Laury’s test kitchen and think I did pretty well :-)

Vegan Peanut Butter Bon Bons

yields 6-7

ingredients:

  • 3/4 Cup Natural Peanut Butter
  • 1/4 Cup Rolled Oats (or 1 Tablespoon coconut flour plus 1/2 Tablespoon coconut oil)
  • 1-2 Tablespoons of Maple Syrup or 1/4-1/2 teaspoon Nu Naturals liquid stevia, divided
  • 1 Tablespoon Nutritional Yeast
  • 1/2 cup vegan chocolate chips
  • 1 Tablespoon coconut oil

Method-

Place 1 Tablespoon Maple Syrup (or 1/4 teaspoon stevia) and the other first  four ingredients  in a bowl (excluding coconut oil and chocolate):

I used a jar of FRESH all natural peanut butter. It was nice and soft. If your PB is hard, you may want to melt it for a few seconds to soften it up.

Take a small cookie scooper and scoop PB balls onto a cookie sheet lined with parchment paper & place in the FREEZER for at least 30 minutes:

After you confirm they are nice and firm. Leave them in the freezer while you prepare your chocolate.

If you are impatient, you can sneak one of the PB balls. I won’t tell ;-)

This batch made 7…but I ended up with an even 6 bon bons for good measure

If you do not have a double boiler (like me), place a metal bowl on top of a pan of boiling water and fill with chocolate chips:

When they start melting a little, add coconut oil so the chocolate is not TOO thick. Sweeten the chocolate with either another Tablespoon maple syrup or 10-15 drops of stevia.  Remove from heat, stirring vigorously.

take your PB balls out of the freezer and carefully dip each in the chocolate to coat. Then place them back onto the wax paper & into the refrigerator:

Let the chocolate harden in the fridge for about a half hour or so.

They actually tasted best when they were softer at room temp. However,  the chocolate does need to harden in the fridge.

I made this recipe so there are not too many to eat. However, if you want you can double, triple, quadruple, etc if you want to share with friends :-)

What goes into it when you create or re-create new recipes? How do you find inspiration?

The inspiration behind the bon bons was a craving, and  I all of a sudden remembered how delicious they were last time I had them, in home ec, like 15 years ago. And my love for chocolate and PB & how many recipes I can come up with for that combo :-)

Oooh they look so good! Jealous of them and your green lemonade. I will have to make at least one of those today. I love that this is an easy vegan recipe to make and that I already have all the ingredients. Sometimes vegan recipes can be intimidating because I feel like I have to restock my pantry to make anything!

You have been cranking out some AMAZING recipes these days girl!! These ones look delicious. When I’m creating new recipes, I’m usually inspired by new ingredients I find and want to try, photos that I see in magazines and online, the Food Network (haha!!) and other blogs.

First off, how the heck did you dip them so perfectly! They are flawless! Second, there is no way I could not eat the entire batch. Peanut butter + chocolate = weakness!!

I’m so safe in the kitchen, I always stick to recipes and don’t really come up with my own. Maybe it’s time to change that!

I love these! I just made the real deal buckeye balls for the holidays and they were loaded with sugar and fat. I felt almost guilty handing them out. What a wonderful alternative. Thank you so much for sharing Laury:)

YUMMY girl! Not only do your bon bons look perfect and cute, but Im sure they are amazing, you just cant go wrong with peanut butter and chocolate IMO. I love the addition of the oats in there!
When I am developing a recipe or creating something new for the blog, I get infpiration from all over the place. I sometimes think of something from my childhood, and want to recreate, or a craving. Actually MOST of the time I would say I create out of wantings and cravings for certain foods. Not a specific food, but just a general food, like pasta, burgers, salad, soup. Then I take that and hit the stores and see what is fresh and looking good. A lot of the time I just get inspired out of nowhere looking at ingredients. I go to the store with NOTHING in my brain, and leave with a week full of new recipe ideas and ingredients. :) And dalso my readers request for oldies done up vegan little house of veggies style. :) Keep coming up with your awesome recipes! You are a great cook and I love seeing your potions you are coming up with in the kitchen!

I’m just like you! I try to make my desserty recipes so that it makes just enough for maybe one each day of the week! This is the perfect recipe for when I get a choc/PB craving and I love that it has some nutritional value! I still havent found nutritional yeast though…

It was more with the peanut butter, and no. It doesn’t taste cheesy at all. I like the savory flavor and nutritional value it added to the dessert!

Laury these look so good! I agree with the above comment about “how did you dip them so nicely?” I’ve made cake balls before and they looked like a mess!

If I am going to adapt a recipe I try to use what I already have in the house and make changes as needed (no dairy and lower sugar) — that is what I prefer!

Mmmmm…these look good. I just have one question for you…why do you add nutritional yeast to the recipe? Just curious as it would be a natural option for me to reach for for something sweet.

I made peanut butter cups a while back that I adapted from Love Veggies and Yoga. She used noosh in the PB mix, and I thought it was a good way to sneak in some nutritional value! I like my PB savory, and the noosh added that for me. Even though you really don’t taste it!

My recipe creations usually come from combing 2 recipes, or adding a favorite ingredient- like PB! I also like to try to make traditional ones a bit healthier.

I don’t think I will ever get over how photogenic Munchkin is!! What a great recipe idea. I have gotten pretty good with cooking but I still have plenty of fails when it comes to creating my own recipes lol!

I loooove how thick you make the chocolate coating! So please do tell, what does the nooch do for the recipe? I’ve seen it in a lot of vegan pb cup recipes, but am still leary.
