Happy Thirsty Thursday, My Pretty’s
Michael complains that I NEVER make him cookies anymore. He LOVES my baking, I don’t do it often…which is probably why he SUPER excited get when I finally do bake him something. These are MY cookies. I am working on making them vegan. However, as Michael said to me:
“Don’t Mess with Success”
Whenever I try switching up a baking recipe that I want to try and make Vegan (my hopes to one day own possibly a Vegan Bakery attached to a fitness studio, lol… baking is my thang *MY DREAM*…but I have yet to perfect the animal-free aspect of it). **Please note, I do not consider myself a vegan, I just try and cook that way and eat that way as much as possible because it is kinder, and healthier! it’s not always practical, and I don’t freak out if there’s an egg in something, I have even considered going back to eating local organic eggs…but I haven’t yet. I also still eat fish occasionally.
All I did with this recipe was sub Earth balance in place of the butter, I could of done a flax egg as well, but I was nervous about using a flax egg in cookies…especially these which were always PERFECT! He hasn’t had them in MONTHS, so I didn’t want them to be ruined just in case!
Before I baked I made a huge batch of Almond Milk (this was filled to the top!) By squeezing the HANK outta the Nut Milk Bag!
Then, time to indulge for once…
I baked some COOKIES
Ooohy Goooey Chocolate Chip Cookies
Makes About 18
1/2 cup Earth Balance, softened
1/4 cup Vegan Sugar
1/2 Cup Organic Brown Sugar
1/8 teaspoon salt
1/2 teaspoon Vanilla Extract
1/2 teaspoon baking soda dissolved in 1 TBSP hot water
1 Organic Egg (you can try using a flax egg if you like–1 TBS ground Flaxseed + 3 TBSP Water, let sit for few mins)
1 + 1/4 cup unbleached flour
3/4 Cup Vegan Chocolate Chips
Directions:
Preheat oven to 350 degrees. Cream together earth balance, egg, sugars and vanilla. Add dissolved baking soda, then add flour and salt slowly as you mix it. Stir in chocolate chips. Bake for 8-12 minutes, I always “under-cook” a little, then let them sit on the pan for a couple minutes so they stay soft inside
Seriously, you guys need to know how much I love you that I’m posting this recipe..I am usually greedy with my really really good ones. My apple cake is my prized possession..it’s been a while since I’ve made it..and it’s DEF not Vegan, so I am not sure if I want to mess with it….yet….perhaps in the future.

Unfortunately, I couldn’t really enjoy the cookies…so I only ate half of one (which is usually IMPOSSIBLE)…
That is because MY Thirsty Thursday will consist of downing a bunch of this stuff…

Fall allergies have seemed to get to me, unfortunately. It’s SO annoying because I NEVER get sick, and in the Spring, I am the ONLY one not sneezing, totally breathin’ easy…but the fall, forget about it. Ragweed is not my friend. I went to the pool the other day, SNEEZING up a storm, couldn’t even enjoy myself. Now…I am congested, miserable, and feel a cold coming on…so I am taking ALL precautions necessary…because I am a freak and hate being sick! I used Michael toothbrush last winter, by accident, while he was REALLY sick, like green phlegm and all (NASTY, I know!)–I wanted to vomit after I realized it (don’t ask HOW I made the same mistake 2x)–but guess what…I NEVER got sick!! Neti pot, Cure-All Tea, and LOTS of green monsters

I have been “netti-potting” too this week! I thought I was getting a cold, but realized it must be allergies. I have also been taking GSE and Propolis and I am so much better. Hope you get better and enjoy those amazing looking cookies!

haha “MAKE ME COOKIES WOMAN” lol i can totally picture him complaining that he hasent had his cookie fix. but its a good excuse to make some huh!! i love how you make ur chocolate chip cookies, theyre really flexible when they bake lol.. if that makes sense.. theyre not those thick ones that are too filling, these are more like the ones u picture when u think of the old fashioned home baked kind.. the soft ones that are sinfully sweet <3

They are REALLY good!! So soft…they came out a little “flatter” when I used Earth Balance, they are usually a teeny bit thicker, but not too thick like you said. ALWAYS the best cookies I ever made!!! My husbands favorite chocolate chip cookies ever
I totally know what you are saying about playing with recipes that are already sooo good. I do that and Nick gets really mad that the tweaked ones aren’t like the the original.
Ah well…vegan stuff can be a bit different…then I have to go add into the mix that it must be gluten-free. At least Nick will give it a try…Bob’s Red Mill GF brownie mix comes out really good vegan, FYI.

You have a Neti pot too! I use to use mine pretty regularly but it always freaks me out to be pouring water through my nose. I should take it out again and use it.

Owning a vegan bakery is a dream of mine too:):) I would always make healthy vegan stuff for the trainers at the gym i worked at and everyone wanted me to start selling it there…but it never happened:/
I like to use 1/2 banana in place of an egg since it gives a nice nutritional boost and since i was craving chocolate chip cookies I’ll have to try these:)

Those cookies… oh my. Ooooh oh my. I would love to have one. Or two. Or a few. YUM! They look so good. And yes, don’t mess with success… as I am right there with you on wanting (SO badly) to open a vegan/raw bakery but alas, my vegan baking skill… suck. Raw “baking” skill are good though.

I loved the Day 2 message. I have a lot of friends that get mad whenever I care for myself over making them happy. Like even something as petty as going home to sleep because I have a test the next day instead of staying out with them for a few more hours. They won’t hold it against me..but for the time being they might give me a hard time about it. That’s actually fairly selfish on their part, but self-caring on mine, you know? Oh well..some people just need to read your blog

If you open a vegan bakery AND a fitness studio, I’m moving to Florida. The end. One day at work, my coworker and I were bored, so we looked up youtube videos of people using neti-pots. It was disturbing, but then again I must be disturbed for looking it up. I’m sorry you’re not feeling well boo boo.
