Quinoa Cakes & Crispy Kale Salad II

The other night I made the best salad ever.

I was playing around with some baby food/adult food recipes and with a little inspiration from Raising Healthy Happy Babies I whipped up these quinoa-garbanzo bean cakes:

High in protein, loaded with veggies, mommy and baby approved!

Ella is turns 10 months old next week! I just started incorporating some new foods into her diet. Up until a month ago it was all fruits and veggies, mostly purees—now she is getting the hang of feeding herself {when she’s not busy throwing it on the floor}.

The fact that she only takes a bite or two; and also how I want her to share my food—not have “special baby/kid food” to eat—I am playing with things that we both can enjoy and be happy!

These mini cakes could be eaten many ways. For the baby, I just cut it up and offered her a few pieces at a time. Whatever doesn’t end up on the floor is game. For grown-ups I would suggest topping them off with some sweet pea puree, or avocado—wrap them up in some collard greens or in a mini bun. Or—you can do what I did:

Crumble it into a salad for some added protein.

These little patties had kale in them already, so I had a bunch of it on-hand. Making this{these} recipe{s} very economical!

Music/Training Questions:

Give me one or two of your favorite running/high bpm songs!?? Or  your favorite Pandora stations. I’m in need of entertainment as I continue my 5k training. Some of you know how much I loathe running {although this training hasn’t been bad!}

Also—do any of you teach or take a tabata bootcamp class?? I am going to start advertising for one in a few weeks—want to get some feedback on what you like, dislike as I design my class!

Ella face is priceless in the first pic! Its like “mom stop taking pictures and let me eat in peace!”

I’m definitely making these once i stock up on quinoa! I’ve been out for a few weeks and i can never get to the natural food store when its open:(

That salad looks awesome! I’m gonna have to make that this weekend.

Love that you want Ella to eat the same foods you do. I think one of the many reasons moms can’t get kids to eat their veggies is because the parents themselves don’t eat them!

I want a mini cake! And a kale salad!
I haven’t taken any classes like that, but I’d love to show up to yours!
Where are you gonna do it? At a gym?
Several years ago, I did one outside—that was fun… you should do a virtual bootcamp along with it! I just saw something like that linked to on another site–the girl had people sign up for $25, and then sent them the workouts and stuff like that.

These look great! Did you freeze the patties before or after you cooked them? I love healthy homemade finger food recipes for our babes! You should check out http://www.wholesomebabyfood.com. They have some great information and a blog with awesome recipes. I made the quinoa banana muffins the other day for my daughter (and I stole a few). The recipe called for maple syrup and I just subbed in apple sauce and used egg yolks only. Nutritious and tasty!

I froze them after I cooked them (and they were fully cooled down of course)–I need to update this post, I forgot to mention that I brushed the tops with olive oil to prevent them from being dry.I was telling my sister in law tonight–and you have to coat the pan or else they will stick! Ella LOVES them! She’s been eating them for either lunch or dinner every day! She eats a whole one, which is crazy because she usually only takes like 4 bites of something!

What a great bunch of posts i got to catch up on! what a fabulous feeling to fly through your closet and try everything on! i remember doing that too after losing some weight a few years ago. i cant wait to feel that again. im really struggling with my last 20 lbs, i keep going up and down and its beyond frustrating!! my poor husband is so wonderful when i get upset and look at my closet and tell him how so much doesnt fit! i think cooking in advance will help, ive gotten so lazy about my food prep since i got married, i just want to h ang out with him instead! i just wrote down this quinoa cake recipe and im going to cook them right now, and have the rest for the week! they look delicious!

also, our honeymoon was so relaxing! we didnt really know the area we went to, and it turns out its a huge beach town, so unfortunately most of the town was shut down for winter, but we stayed in an AMAZING inn, and they gave us great tips on things to do and see.

I am so glad you had a nice relaxing honeymoon! Thanks for letting me know!! That stinks there wasn’t much to do but I bet it was nice just spending alone time unplugged with your husband!

Oh man! I really want to make these :D I’m visiting my parents in Florida right now and I think this is something we would all really enjoy. I bet it’s great with a tahini dressing. YUM!
